Naturally rich in polyphenols, particularly hydroxytyrosol, the Atlas EVOO stands out due to the harsh desert environment of Morocco. The extreme conditions, such as scorching summer temperatures, rocky soil, and limited water, cause the olive trees to experience "panic" and produce a remarkable quantity of antioxidants to survive. This results in an extraordinary hydroxytyrosol content in the resulting olive oil.
Atlas Olive Oils has meticulously approached every aspect of its organic EVOO production process, adopting only sustainable procedures. The company's organic olive groves span 245 hectares (605 acres) in the Marrakech region, with a variety of cultivars, including Picholine du Languedoc, Picholine Marocaine, Menara, Haouzia, Chemlali, and Dahbia, as well as Arbequina and Arbossana.
The olives are harvested from late September to late December and are then cold-pressed using a two-phase continuous system, with a maximum temperature of 26°C. This results in a yield of between 11.5% and 15%, with a maximum acidity of 0.2% for the modern orchards and 0.4% for the old bicentenary orchards.
